Salted Caramel and Dark Chocolate Bark

Dairy-free, nut-free

Ingredients

    Salted Caramel
  • 1/4 cup unhulled tahini
  • 3 tblsp rice malt syrup
  • 2 tblsp coconut oil
  • 2 tblsp mesquite powder
  • pinch (or two) sea salt
  • Dark Chocolate
  • 2 tblsp coconut oil
  • 2 tblsp cacao powder
  • 1 tblsp rice malt syrup
  • 1 tsp mesquite powder
  • pinch sea salt

Instructions

    Salted Caramel
  1. Heat all ingredients gently together in medium saucepan on low heat. Stir till melted and combined.
  2. Do not cool
  3. Dark Chocolate
  4. Place all ingredients in small saucepan and stir on low heat till combined.
  5. Finally
  6. Pour salted caramel onto baking paper-lined tray and spread evenly. Top with dark chocolate and swirl through gently. Freeze till set then break into pieces. Store in freezer.
  7. Instead of bark, you can make this recipe into small moulds. On the bottom, put a layer of the caramel and then top with the chocolate layer...or vice versa!
