Have you ever massaged kale before? This was my first time! It’s quite fun and easy and if you haven’t already, give it a go 🙂

This raw salad uses kale from my garden (picked earlier before it wilted – it’s hot here today), in season mangoes and the lone avocado in my fruit bowl. It’s a plant-based, wholefoods yum bowl and I hope you enjoy it as much as I did!

Raw Kale Mango and Avocado Salad

Dairy-free, nut-free

Ingredients

  • 1 bunch of kale, stalks removed
  • 2 tblsp olive oil
  • 1/2 lemon, juiced
  • 1/2 tsp sea salt
  • 1 mango, cubed
  • 1/2 avocado, cubed
  • 2 tblsp sunflower seeds, toasted

Instructions

  1. Tear kale into bite-size pieces, put into large bowl
  2. Add olive oil, lemon juice and salt
  3. Massage the kale with the dressing till the kale softens. I did this by wringing it like a dishcloth, squeezing it between my two hands and kneading into the base of the bowl. I'm sure there's more precise technique out there!
  4. Add mango and avocado, toss lightly
  5. Top with sunflower seeds.
