Have you ever massaged kale before? This was my first time! It’s quite fun and easy and if you haven’t already, give it a go 🙂
This raw salad uses kale from my garden (picked earlier before it wilted – it’s hot here today), in season mangoes and the lone avocado in my fruit bowl. It’s a plant-based, wholefoods yum bowl and I hope you enjoy it as much as I did!
Dairy-free, nut-free
Ingredients
- 1 bunch of kale, stalks removed
- 2 tblsp olive oil
- 1/2 lemon, juiced
- 1/2 tsp sea salt
- 1 mango, cubed
- 1/2 avocado, cubed
- 2 tblsp sunflower seeds, toasted
Instructions
- Tear kale into bite-size pieces, put into large bowl
- Add olive oil, lemon juice and salt
- Massage the kale with the dressing till the kale softens. I did this by wringing it like a dishcloth, squeezing it between my two hands and kneading into the base of the bowl. I'm sure there's more precise technique out there!
- Add mango and avocado, toss lightly
- Top with sunflower seeds.
