I was looking through my Notes app recently and found this recipe I’d saved in 2014. Of course, I had to make it again and it was great – a very delicious, easy quick treat for the freezer box (my perennial healthy treat Tupperware container where I store all my baking. It avoids eating all the treats at once, plus they never go off…and there’s an on-going supply for kids, visitors and my afternoon tea).
I left out the orange essential oil as I didn’t have any, and my sesame seed supply was low so I topped up with sunflower seeds. I also played around with the add-ins depending on what I had. Feel free to do the same as it’s a good recipe for adapting.
(I have no idea where the recipe came from, sorry!).
Ingredients
- 75g sesame seeds or sunflower seeds (or combination of both)
- 100g almond
- 1/4 tsp sea salt
- 150g organic dark chocolate (I used 70%)
- 30g coconut oil
- 5-6 drops pure Orange Essential Oil (or to taste)
- 30g coconut sugar
- 1tsp vanilla extract
- 50g walnuts
- 50g coconut
- 2tblsp goji berries
Instructions
- In high speed blender or Thermomix, grind till finely ground seeds, almonds and sea salt. Put aside.
- Melt together chocolate, coconut oil, Orange Essential Oil, coconut sugar and vanilla.
- Add ground nut and seed mix to chocolate mix and stir till well combined.
- Stir through walnuts, coconut and goji berries.
- Spread onto a small, lined baking tray and sprinkle with extra coconut and goji berries if desired.
- Place in fridge till firm before cutting into squares.
