I’m always on the look-out for the ‘meat or equivalent’ part of the lunchbox. Fruit, veggie and snacks are pretty straightforward but if you’re not a big of processed meat then you need to get creative. Balls, baby, balls!

Lunchbox Chicken Balls

Dairy-free, nut-free, gluten-free, grain-free

Ingredients

  • 500g chicken mince
  • 1 carrot, grated
  • 1 egg, whisked
  • 1 tsp Italian seasoning
  • 1-2 garlic cloves
  • salt and pepper (opt)

Instructions

  1. Combine all ingredients into a large bowl.
  2. Mix till well combined.
  3. Shape mix into balls.
  4. Place on lined baking tray.
  5. Spray with olive oil.
  6. Bake in 180C oven for 20-30 minutes.
