This recipe is one of my Instagram finds. As usually happens, I tweaked it here and there to put my bent on it. I’ve made can you buy diflucan at walmart them a couple of times and they turn out perfectly. A nice rise to the muffins, not too dense and good lemony crunch. I’m thinking of using it as a base recipe to try other flavours – orange and chocolate maybe?
Gluten-free, low sugar, dairy-free, grain-free, wheat-free
Ingredients
- 1 cup (100g) almond meal (I made my own in the Thermomix)
- ½ tsp baking powder (gluten free if required)
- 2 eggs
- ¼ cup rice malt syrup
- 1 tsp vanilla extract
- 6-8 drops Pure Lemon Essential Oil (or 2tblsp fresh lemon juice)
- 1 tblsp lemon zest (optional – l left it out but sure it would be great with it)
- ¼ cup coconut oil, melted
- 1 ½ tblsp poppy seeds
Instructions
- Preheat oven to 180C
- Whisk almond meal and baking powder in a bowl.
- Add eggs, syrup, vanilla and lemon and mix till combined.
- Add coconut oil and poppy seeds and mix well.
- Spoon mixture into mini muffin pan (greased)
- Bake at 180C for 15-18mins or until golden brown.
- Let cool completely before removing from pan.
