I’ve just made applesauce (a favourite of my youngest daughter) after receiving a bagful of apples from Mum’s tree. My applesauce is so plain…just chopped apple and water, lid on and cook until soft. No measurements, no timing.
Of course, adding spices like cinnamon and nutmeg is divine but plain allows you to use the sauce as a base, like in this recipe.
Try mashed banana if you’re in between applesauce batches.
Oats, nut butter, fruit, spices and a bit of real chocolate…why not eat these cookies for breakfast?! They also make a great after-school snack.
Dairy-free, egg-free, gluten-free, low sugar
Ingredients
- 1/2 cup applesauce (can substitute with mashed banana)
- 1/4 cup nut butter (I use this recipe)
- 3/4 cup rolled oats (or 1/2 cup quinoa flakes + 1/4 cup coconut)
- 1 heaped tablespoon cranberries
- 1 heaped tablespoon cacao nibs
- 1 tblsp rice malt syrup
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- pinch sea salt
Instructions
- Preheat oven to 180C.
- Mash applesauce and nut butter till well combined.
- Add all the other ingredients and mix thoroughly.
- Scoop tablespoons of dough onto lined baking tray.
- Bake 15mins or till lightly browned.
- Cool on wire rack.
