If you like the taste of carob – and accept it isn’t chocolate! – then this sweet treat without the sugar is right up your alley. I love the richness and how satisfying it is when I want something just for me.
It stores well in the freezer, so make up a batch and enjoy!
Nut free, no added sugar, gluten free, vegan
Ingredients
- ½ cup coconut oil
- 1/3 cup carob powder
- 1 tsp vanilla extract
- 2 tblsp coconut
- ½ cup blueberries (fresh or frozen)
Instructions
- Gently melt coconut oil then remove from heat.
- Add carob powder, coconut and vanilla and stir till well combined.
- Tip blueberries in and mix well.
- Pour mixture and spread evenly onto baking paper-lined tray.
- Place in freezer till set.
- Break into shards and store in freezer.
