Buckwheat Banana Chocolate Muffins

Gluten-free, nut-free, dairy-free, low sugar, wheat-free, grain-free

Ingredients

  • 3/4 cup buckwheat flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • pinch of sea salt
  • 1/4 cup chopped dark chocolate
  • 1 ripe banana, mashed
  • 2 eggs
  • 1/4 cup rice malt syrup

Instructions

  1. Whisk dry ingredients together in large bowl.
  2. Add chopped dark chocolate.
  3. In medium bowl, combine mashed banana, eggs and rice malt syrup.
  4. Mix wet ingredients with dry ingredients and gently stir until just combined (don't overmix).
  5. Put mix into mini muffin pan.
  6. Bake in 180C oven for 15-20mins.
  7. Grate dark chocolate onto top of muffins while still hot (opt).
  8. Cool before removing from pan.
