This is a snack idea more than a proper recipe. My girls love it after school when we have bananas in the house. It might also be an option for fussy breakfast eaters.

I’ve included a nut butter recipe that I’ve made a couple of times recently but you can choose your combination of nuts.

Banana Nutbutter Sandwiches

Dairy-free, sugar-free, gluten-free

Ingredients

  • 1 banana
  • Homemade or store bought nutbutter (preferably organic)
  • Nutbutter
  • 2 cups almonds
  • 1 cup Brazil nuts
  • 1 cup cashews or macadamias
  • sea salt

Instructions

  1. Cut banana into slices
  2. Sandwich nutbutter in between slices
  3. Serve to grateful kids and adults!
  4. Nutbutter
  5. Pre-heat oven to 160C
  6. Lay nuts on large baking sheet
  7. Toast till lightly brown (I keep checking 10-15mins)
  8. Set aside till nuts cool
  9. Add nuts to Thermomix or high speed blender and blend on high for 1 minute
  10. Scrape down bowl and blend for another minute, scrape down bowl
  11. Add a pinch or two sea salt
  12. Keep blending till nuts are runny
